Punjabi Kadhi

Popular north Indian dish made from yogurt and gram flour based gravy topped with onion fritters. Delicious ,velvety heart warming dish

Ingredients For Pakora

Gram Flour /Besan – 3/4 cup

Oil – To deep fry

Onion – 1 med

Dry Fenugreek – 1 tsp

Coriander – 1 tsp

Ginger – 1 inch

Red Chilli Powder – 1/2 tsp

Baking Powder- pinch

Ajwain / Carom Seeds – 1 tsp

salt to taste


To prepare onion pakoras for kadhi mix all the ingredients gram flour, dry fenugreek, ginger, red chilli powder, baking powder, ajwain, salt, chopped coriander ,mix well . slice onions length ways and add to the mix ,make a dropping consistency batter by adding water.

Take a deep frying pan, add oil in it and heat it over medium flame. Take small portion of batter and fry pakoras until they turn crispy and brown. Remove and place over tissue paper to remove excess oil. keep them aside for later use

Ingredients For Kadhi

Gram Flour/ Besan – 1/4 cup

Yogurt (sour) – 1.5 cup

Turmeric Powder – 3/4 tsp

Salt as per taste


Oil – 3 tsp

Fenugreek seeds / Methe – 1/2 tsp

Cumin Seeds- 1 tsp

Whole Red Chillies – 2

Curry Leaves – 8

Grated Ginger – 1inch

Cinnamon – 1/2 inch stick

Cloves – 3

Method to Prepare Kadhi

To prepare the curd mixture, take curd and whisk properly until it gets smooth.

The curd should be sour in taste if not, it can change the flavour of the dish. Add seived gram flour, turmeric powder and salt as per taste. Whisk all the ingredients properly. Add 3-4 cups of water and stir to remove all the lumps.

Cook on low heat till the rawness of besan is eliminated. takes about 15 – 20 min . You can add little water if the kadhi is getting too thick .

Add the pakoda to the kadhi mix and cook them for 10 min .

Tempering :

In a small pan add 3 tsp oil once its hot add fenugreek seeds, cumin seeds saute well for 30 seconds ,add ginger ,red chillies,cinamon,cloves to the pan,saute well. Finally, add curry leaves and stir for few seconds.

Add tempering to the kadhi mix. Serve hot with rice or naan
