Introduction

Ingredients
- Ripe plums-3
- Sugar-2 Tbsp
- Buttery-85 gms
- Condense milk-85gms
- Egg-1
- Self raising flour-100 gms
- Baking powder-1/4 tsp
- Ginger-1/4 tsp
- Nutmeg Grated-2 pinch
- vanilla extract-1 tsp
- Water-3 Tbsp
Method:
Preheat the oven to 180°C, (160°C for fan ovens), Gas Mark 4.
Stone the plums and cut it in to 4 quarters.In a pan add the plums with 3 tbsp water and 2 tbsp sugar and simmer for about5-10 min (until soft).
In a separate bowl beat condense milk,butter and egg till nice and fluffy .Now add flour,ginger,vanilla,nutmeg powder,baking power and mix well.
In a ramakin bowl at the bottom ,layer with a tablespoon of plum mixture and spoon the sponge mixture and smooth the top.Put tins in deep roasting tin or loaf tin
Pour hot water from a kettle into the roasting tin until about halfway up the sides of the puddings. Cover the whole tin with foil, carefully transfer to the oven (taking care to keep the tin level) and bake for 20-25 minutes until light golden and risen. let it cool and serve them upside down.
In the picture i topped it with condense milk .But you can also serve with custard.Adapted by condense milk recipe
