Coffee Walnut Cake

For all the coffee lovers,this buttery yet very light sponge cake with rich coffee taste and walnuts is a must try .

Ingredients

For Sponge

Self Raising Flour-175 gms

Butter Softened-175 gms

Eggs-3

Caster Suger-175 gms

Baking Powder-1/2 tsp

Instant Coffee Granules-1 tbsp(dissolve in 1 tbsp boiling water)

Chopped Walnut-75 gms

For the Filling

Unsalted Butter-125 gms

Icing sugar-300 gms

Walnut Pieces-25 gms (to decorate)

Coffee Granules-3 tbsp(dissolve in 2 tbsp boiling water)

Cream(optional)- 4 tbsp( whipping,single or double)

Method

Preheat oven at 180 c fan forced or 350F .

In a bowl add butter and sugar and beat until light and creamy.

Gradually add eggs (one at a time) beating well after each addition. Add chopped nuts and beat lightly.

Now add the sifted flour and baking powder to the butter mix. Fold the ingredients until combined.

Divide the mixture equally in to two tins (2* 20 cm) and bake for 20-25 mins .

Let the cake cool.

For the filling mix- Heat the butter on a low heat in small pan until it starts bubbling.

Sift icing sugar in a heat proof bowl and pour the butter on top with dissolved coffee and cream.beat well until the mixture is smooth .

Leave it in the fridge until it is thick enough to spread.

Decorate the cake .
