Apricot and Walnut Loaf

Enjoy the taste of  this lovely, moist loaf cake with Apricots and  walnuts.

Ingredients

Apricots(roughly chopped)-185 gms

Self-raising flour- 2 cups

Bicarbonate of soda-1 Tsp

Caster sugar-1 cuo

Walnuts (chopped)- 1 Cup

Egg- 1

Orange Juice- 1 Cup

Butter- 60 gms

Method

1. Preheat oven to 170 C(fan forced). Grease a 6cm deep base loaf pan. Line with baking paper.

2. In a saucepan add Apricots and 1 cup cold water and cook over medium heat. Bring to the boil and simmer for 5 minutes or until apricots are soft. Drain, reserving 100ml liquid.

3. Sift flour and bicarbonate of soda into a bowl Add sugar and walnuts. Stir to combine.

4.Make a well in the centre. Combine egg, orange juice, butter  and reserved liquid. Pour into well Add apricots and mix well.

5. Spread mixture into prepared pan. Bake for 40 to 50 minutes or until a skewer inserted into the centre

comes out clean. Cool in pan for 10 minutes. Transfer to a wire rack. Serve
