Introduction

Kids these days always want something different to eat and It is very difficult to come up with a dish that is inviting and healthy to eat.I stumbled over this very tasty couscous salad recipeĀ  which is not only easy to prepare but also great for snack or lunch box.

Ingredients

Couscous-1/4 cup (45-50 gms)

Vegetable stock-1/2 cup(125 ml)

Carrot-1 medium finely chopped

Red bell pepper-20 gms(1/8 of cup)finely chopped

Spring Onion-1 finely chopped

Raisins-1 Tbsp

Pine nuts-optional(or 1 Tbsp)

Salad Dressing:

Olive oil-1 Tbsp

Honey-1/2 Tsp

Lime Juice-1&1/2

Salt -as per taste

Pepper-as per taste

Method

Take couscous in a bowl and add the boiling vegetable stock and cover for 10 min.

Now fluff up your couscous and add all your vegetables and mix well.

In a small bowl mix all the ingredients of salad dressing and mix with the couscous.Season salt and pepper as per taste.

Tip:For stock you can use the shop bought vegetable cube and mix in boiling water
