Watermelon Halwa

Watermelon is one of my favourite summer fruit . We all must have had watermelon juice or form of lollies but never as a dessert. Watermelon rind is the white portion of watermelon which is nutritious but lacks flavour . We all happen to discard it so, try this delicious halwa recipe made from the rind of watermelon

Serves- 2

Ingredients

watermelon Rind – 1 (cup pureed only white part )

Ghee- 2 tbsp

Semolina- 1/2Tbsp

Gram Flour-1/2 tbsp

Sugar – 1/4 cup

Milk – 3/4 cup

Cardamom Powder – 1/4 tsp

Nuts – 2 tbsp

Method

Take the watermelon and peel of the green outer thick layer of we only need the Rind (ONLY WHITE PART few bits of red is fine). Chop and blend in blender to a coarse paste ( 1cup).

Heat ghee in a thick bottom pan on low flame and add semolina ,gram flour and roast it till golden .

Add the pureed watermelon to the pan and cook for about 10 mins or till it thickens. Keep stirring occasionally.

Add sugar and further cook it for 5 min on medium to low flame.

Add milk ,cardamom powder and 1 tbsp nuts, further cook for 5 to 10 min or till it thickens .

garnish with nuts and serve.
