Paella

A healthy Spanish dish with seafood and chicken . Paella  is easy to make and super delicious.

Ingredients

Paella Rice- 300 gms

Boneless Chicken-  200gms

Cooked Prawns- 200 gms

Frozen Peas- 100 gms

Chicken stock cube- 1

Olive Oil-  2 -3 tbsp

Onion- 1 med

Carrot- 1 med

Garlic – 2-3 cloves

Flat Parsley- 2 tbsp

Red pepper- 1

Smoked Sweet Paprika- 1 tsp

Tomato Puree- 1 tbsp

Lemon- 1

Black Pepper-Pinch

Salt

 

Method

Peel and roughly chop garlic, onion, carrot . Finely chop parsley stalks( reserve leaves for later).

Chop chicken in decent size pieces . clean prawns and keep it aside.

Heat oil in shallow pan and  add garlic ,onion, carrot, chicken and paprika and fry for 5 minutes.

Deseed and chop pepper and add to the pan and cook for 5 minutes.

Now add the tomato puree and the stock cube ,also add rice and stir for few minutes.

Add 750 ml of boiling water with pinch of salt and pepper.Reduce for 15 mins.

Keep stirring regularly from outside in add a little water if needed.

Stir peas and cooked prawns and further cook for few minutes.

Once cooked sprinkle chopped parsley leaves a serve hot with lemon wedges on side.
